With the exception of the ‘Member’ who has never taken a PDC, all of the above can apply to become a PRI PDC Teacher. PRI PDC Teachers are those who the PRI recognise, through a vetting board, as determined and competent to teach the full 72-hour course as developed by Permaculture founder Bill Mollison – covering all the topics of The Designers’ Manual as well as possible (i.e. not cherry picking only aspects the teacher feels most interested or competent in). Such teachers also commit to focussing on the design science, and not including subjective spiritual/metaphysical elements. The reason these items are not included in the PDC curriculum is because they are “belief” based. Permaculture Design education concerns itself with teaching good design based on strategies and techniques which are scientifically provable.

PRI PDC Teachers may be given teaching and/or consultancy offerings as they become available as the network grows.

Another choko recipe, AppleChoko crumble with yoghurt, to warm you up ready for the day!

AppleChoko crumble…

Chokos, apples, sultanas, some clove and cinnamon powder and a little yacon sirup, topped with some coconut or bunya nut crumble and yoghurt… A nice warming start to the day! 

Cut up a kilo of apples and as many chokos as you like / want / need to use up. Put the pieces into a saucepan, add a tsp of powdered cloves and a tsp of cinnamon and sweetener of your choice (I use home made yacon sirup). Amount of sweetener used depends on how sweet you would like your breakfast… Add some water to ensure the apples and choko do not stick to the bottom and bring to boil with lid on pot. Stir regularly. Whilst this is boiling you can make the crumble. Either whip 6 eggs and add around 3/4 cup of coconut flour (the mix can be a little dry, so add more flour if too wet) OR put 3 handfuls of boiled bunya nuts into a blender with 6 eggs and blend. Add a little water if necessary to draw down.

Put the crumble mix in a heated pan, greased with melted ghee. Stir the mix whilst cutting it with the egg flipper to get the crumbly effect. Just before the mix is cooked, add some dessicated coconut.

When the apple and choko is soft, take off the heat and spoon into bowls. Add the cooked crumble mix on the top and top it with yoghurt. Enjoy this warming breakfast! (serves around 4, but leftovers will keep in the fridge for a few days and also makes a nice snack or dessert!)
